Alright, this needs some explanation.
I love steel-cut oatmeal. However, I don’t like the 30+ minutes that it takes to make. When I wake up in the morning, I’m not always ready to commit that amount of time to my breakfast. Thankfully, I found a way around this, and it only takes 2 minutes away from your morning.
Make multiple servings of oatmeal on Sunday, freeze into little pucks, and microwave in the morning for the rest of the week! I wish more food was this easy to hack.
3 cups water
½ tsp salt
1 cup stell-cut oats
Bring the water and salt to a boil over medium heat. Add the oats and reduce heat to low. Stir occasionally while it simmers away (15 minutes for more texture, 25 minutes for more creaminess). Add a little more water if needed.
When oatmeal has reached the consistency you want, divide oatmeal into a muffin tin (this will make roughly 1 dozen pucks). Let it cool a bit and then place it in the freezer. Allow an hour or so to freeze.
To remove oatmeal from the tin, run warm water over the back of the tin. This will losen the pucks. Place in a baggie or other container.
Microwave with 1 Tbsp of milk (or water) for 2 minutes and serve!
